In 1966, Kato Kichibee Shoten Brewery officially registered "Born" as a product, and in 1968, we became the first brewery in Japan to sell Daiginjo sake commercially, a practice that continues to this day. The brand name "Bon" (born) is a Sanskrit word meaning "pure and undefiled" or "reaching the truth," and the word "born" itself represents "birth" and "creation" for the future. At the beginning of the Showa era, it had the honor of being used for the first time as a regionally selected sake during the enthronement ceremony of the previous Emperor, and it has continued to be used at numerous important occasions in Japan to this day. It boasts a refreshing yet robust aroma, a wonderfully clean finish, and a light yet deep flavor. When warmed, the acidity becomes more pronounced, deepening the flavor and making it exceptionally delicious. This is a classic Born sake that pairs well with traditional Japanese cuisine, as well as flavorful fish and meat dishes and anything from home cooking to authentic Western cuisine.
